Crispy Chicken Burritos

Boys, when you want to make something to impress a date that is a) simple to make yet b) incredibly delicious, here ya go! Serve them with some homemade guac, sour cream, and shredded lettuce, and impressed your date shall be.

These babies are always a huge hit. Crispy, chewy, full of flavor, and incredibly satisfying. If you don't want to fry up the tortillas, you could just make delicious chicken burritos out of it.
INGREDIENTS
FOR THE BURRITOS
1 pre-cooked rotisserie chicken, shredded
1 brick of cream cheese (room temperature)
1 16oz. bag shredded Mexican blend cheeses
1 4oz can diced green chilis
1/2 onion diced
2 tsp. chili powder
1 tsp. paprika
1/2 tsp. cayenne pepper
Salt & pepper
8-10 burrito size tortillas
Canola oil or Vegetable oil for frying
Shredded iceberg lettuce
Diced tomatoes
Sour cream
Guacamole (recipe at the bottom)
FOR THE GUACAMOLE
6 Avocados, diced
1 Jalapeno, minced
3 Roma tomatoes, diced
1/2 red onion, diced
1/2 bunch cilantro, minced
Juice of 1 large lime
Salt and Pepper
DIRECTIONS
In a large bowl, mix together the shredded chicken, cream cheese, shredded cheese, green chilis, onion, chili powder, paprika, cayenne, a pinch of salt and a couple of grinds of pepper from your peppermill. Divide the mixture between the flour tortillas (amount depends on how filled you'd like the burritos to be). Roll the burritos tightly, making sure all ends are tucked.
Heat oil in a heavy duty pan (I use a 12" cast iron pan) over medium-high heat, so that it's deep enough to cover at least half up the burritos. Fry up the burritos (open side down first) until golden and crispy (approximately 3-5 minutes on each side). Once fried, place them on a rimmed cookie sheet, lined with paper towels, in a warm oven to keep warm while you continue frying the rest. Turn heat down on stove if they are getting too dark too quickly.
Make the guacamole. Mix avocado, jalapeno, tomatoes, red onions, cilantro and lime juice together using a fork to mash the avocado into desired consistency. Season with salt and pepper to taste.
Serve the crispy burritos with the lettuce, tomatoes, sour cream, and guacamole. A side of tortilla chips to scoop up the excess is also always a good idea.
