Filipino Spaghetti

Although this is not an original recipe of mine, it deserves a spot in the blog because of how unique it is and how much you boys enjoyed it. I also don't want it to turn into one of those dishes I make once and then forget about. Other Dad/Dad is the one who first heard of the dish, looked it up, and insisted we give it a try. It's kind of like a sweet spaghetti with hot dogs (I know, it sounds pretty different). There are many different versions of this dish, and I tried to find as authentic of one as possible. This particular version comes from a woman who made this frequently in the Philippines before she immigrated to North America.

I did add a bit of my own touch to this recipe by adding some "hot and spicy" banana sauce rather than all regular banana sauce. It didn't turn our very spicy at all, so if you want more spice, you could swap out more hot and spicy for the regular, or if you don't want any heat at all, you could use all regular banana sauce. Also, some recipes use Velveeta Cheese rather than cheddar, so you could give that a try too!


INGREDIENTS

1 lb spaghetti noodles

Olive oil

6 hot dogs, sliced on a diagonal

1 white or yellow onion, chopped

2 large cloves garlic, minced

1 lb ground pork

Salt and pepper

2 1/2 cups tomato sauce

1/4 cup tomato paste

1/4 cup hot and spicy banana sauce (optional)

3/4 cup banana sauce (if not using hot and spicy, use 1 cup)

Grated cheddar cheese


DIRECTIONS

Cook the spaghetti noodles in salted water according to package directions. Drain and toss with a bit of olive oil to keep them from sticking.


While the noodles are cooking, heat a tablespoon or so of olive oil in a nonstick skillet over medium heat. Cook the hot dogs until browned and then place on a paper towel lined plate to drain the grease. In the same pan, saute the onion until it starts to soften and become translucent. Add the garlic and saute for another minute. Add the ground pork and cook until cooked through and most of the liquid has evaporated. Salt and pepper to taste.


To the skillet, add the tomato sauce, tomato paste, and the banana sauces and gently stir until combined. Reduce heat down to medium low, cover, and let simmer for about 15 minutes to allow the flavors to meld. Stir in the hot dogs.


To serve, combine the sauce and noodles and plate the desired amount. Add grated cheddar cheese on top of the pasta. Enjoy! It's definitely unique to us, but it was surprisingly tasty!
