Growing up, this was always one of my most favorite holiday dishes (okay, it still is), and it has become a favorite of all four of you boys as well. Every year, up until the holiday season of 2020 due to the COVID-19 pandemic, Grandma McGrew made this and brought it to our family gatherings. For Thanksgiving 2020, she shared the beloved recipe with me, so that I could make it for us. Here, I share it with you, my loves. As you know, it is sweet, creamy, and simply delicious in a retro, always satisfying, must have kind of way.
INGREDIENTS
1 6oz. package strawberry jello
1 80z. brick cream cheese, softened
1 16oz. tub frozen, sliced strawberries in sugar, thawed
2 cups boiling water
DIRECTIONS
In a large mixing bowl, dissolve the jello in 2 cups boiling water. Mix in the cream cheese. Add 3/4 cups of the juice from the defrosted strawberries. Fold in the strawberries then pour the mixture into your desired serving dish. Refrigerate until solid (at least 5 hours).
