Moist, sweet and utterly delicious banana bread that happens to be packed with protein. I created this recipe for you, sweet Colton, my sweets and bread-loving boy. You don't love eating meat or beans right now, so I have to get creative with sneaking protein in wherever I can.
INGREDIENTS
3/4 cups butter, softened
1 cup granulated sugar
2 eggs, room temperature
3-4 ripe bananas
1/2 cup plain greek yogurt
1/4 cup whole milk (or any milk you have)
1 1/2 cups all purpose flour
1/4 cup chia seeds
1/2 cup vanilla protein powder (we use plant-based)
1 tsp. baking soda
1 tsp. salt
DICRECTIONS
Preheat the oven to 350 degrees fahrenheit and grease a nonstick loaf pan. Beat the butter and sugar until light and fluffy with an electric mixer. Add the eggs, beating well after each. In a medium mixing bowl, smash the bananas using a potato masher and then add the yogurt and milk. Mix well. In a third bowl, whisk together the remaining (dry ingredients). To the butter mixture, slowly add and alternate the wet and dry ingredients.
Bake for 55-60 minutes until a toothpick comes out mostly clean (a tiny little trace of moist dough is okay). Let the loaf sit for 10 minutes before inverting it onto a board. Enjoy with a dab of butter and a tall glass of milk!
