Something Special Salad

You boys are fine with eating salads-you always have been. But this salad is something special (thus the name), and it even surprised you all with how yummy it was. The beautiful colors, array of textures, and collection of flavors truly makes it exciting to eat. It's perfect as a holiday side dish, as part of a brunch, or it could easily be turned into a full meal with a grilled chicken breast.


INGREDIENTS

For the salad

Approximately 6 heaping handfuls of mixed greens

2 medium oranges peeled, wedged, and chopped

2 medium avocados peeled, seeded, and chopped

1 cup-ish fresh pomegranate seeds (it's best to seed them yourself)

1/2 cup toasted pecans)


For the dressing

3 tablespoons extra virgin olive oil

2 tablespoons honey

Juice from a medium or large orange

1/2 a medium shallot, finely minced

salt and pepper to taste


DIRECTIONS

First, make the salad dressing by placing all ingredients into a mason jar or salad dressing shaker. Shake it up well until the ingredients are incorporated. Keep in the refrigerator until ready to serve the salad.


When you're ready to serve the salad, I like to mix in a little of all of the ingredients but then scatter a good amount on top, so it looks pretty. I actually forgot to take a picture of our salads until most of it was gone which is why the photo here isn't great (well...that and because I'm not a photographer AT ALL). Anyway...don't dress the salad until right before serving-you don't want your greens to get all wilted and soggy. And be sure to shake the dressing up again before using it too because the oil will separate from the rest.
